From Elden Ring Wiki
Sites of Grace are the Checkpoints of Elden Ring. These special locations feature a luminous remnant of Grace, enshrined by a small stump of roots, and allow a moment of respite in The Lands Between. Sites of Grace function pretty adjacent to how Bonfires worked in FromSoftware's previous titles, the Dark Souls series.

Sites of Grace Menu Options in Elden Ring
From a Site of Grace you select the following menu options:
Pass Time: Allows you to pass time for day/night events.
Level Up: Allows you to spend Runes to increase your character Level.
Flasks: Allows you to add an extra charge if enough Golden Seeds are available, increase the potency of your flasks if you have Sacred Tears in your inventory, and distribute the number of uses in each of your flasks.
Memorize Spell: This menu allows you to allocate Sorceries and Incantations. Your memory slots determine the number of Sorceries and Incantations you can memorize. More memory slots can be acquired with Memory Stones.
Sort Chest: Here you can browse and sort your items. If you are already carrying the maximum amount of items when you pick up a new item, it will be sorted in the chest automatically.
Great Runes: Allows you equip a restored Great Rune.
Ashes of War: Here you can use Ashes of War to grant affinities and Skills to your armaments. Please check Upgrades for more information.
Alter garments: Allows you to alter the appearance of a select few pieces of armor at a cost of 500 Runes. See Tailoring Tools.
Through your map, you can instantly travel to any sites of grace that you've discovered. However, this cannot be done while inside dungeons with undefeated Bosses.

Place on the eye of another to grant them the light of grace as a fleeing blessing. Can also be used to receive the blessing of an equipped Great Rune.
In the realm of shadow, this artifice was employed by the priests of the Erdtree to quell the fears of their flock to magnificent effect.
