John shared thisThe Rapid Shift: From Functional Foods to Metabolic Resilience Nutrition (And Why Taste remains King) The F&B industry is accelerating away from "ultra-processed" and towards genuine health. We are witnessing the decline of negatives (sugar, excess salt, alcohol) and the aggressive surge of positives (functional nutrition, protein, fiber, nutraceuticals). But the target is moving. It’s no longer just general wellness; it’s about longevity (autophagy), mitochondrial health, muscle health, gut health, metabolic flexibility, glycemic stability, and inflammation control. Functional Nutrients were step one. The next frontier is Metabolic Resilience Nutrition (MRN). This shift demands sophisticated new metrics replacing old ones: 🔹Calories will become less important; Glycemic Load & Insulin Response will become a priority. 🔹Generic Presence out; Bioavailability & Absorption in. 🔹General Fiber out; Microbiome Integrity in. The Sensory Challenge: Consumers demand these complex benefits in convenient formats with total transparency. Yet, potent MRN ingredients often bring inherent off-tastes and challenging mouthfeel. Taste, Masking, and Mouthfeel remain the absolute non-negotiable gatekeepers for repeat buying. If the consumer doesn’t enjoy the experience, metabolic science doesn't matter. It was used in multiple procedures including #LET repairs, highlighting the versatility of the #RapidFix. While initially designed with the rotator cuff in mind, its novel broad compression repair pattern/instrumentation can be applied across multiple parts of the body. Moments like this never happen overnight. They come from years of iteration, hard conversations, setbacks, problem-solving, persistence, teamwork, and belief from people willing to keep going before the outcome is certain. The "periodic table of vitamins" explained simply (my attempt) We all know vitamins and minerals matter, but keeping track of which ones do what can feel like chemistry class. Here’s an attempt at the plain-English version: 1️⃣ Vitamins = Activators They turn enzymes and reactions on, making energy, neurotransmitters, and hormones possible. 🟢Example: B12 and folate drive methylation, critical for DNA repair and brain function. 2️⃣ Minerals = Spark Plugs Minerals act like cofactors that help enzymes run. 🟢 Example: Magnesium is needed in more than 300 reactions, from ATP production to muscle relaxation. 3️⃣Antioxidants = Shields They neutralize free radicals that damage cells. 🟢 Example: Vitamin C recycles Vitamin E, while CoQ10 protects mitochondria. 4️⃣ It’s a Network, Not Solo Players These nutrients recycle and regenerate each other. One deficiency can drag the whole system down. 🟢 Example: Without selenium, glutathione can’t work; without B2, folate can’t activate. 5️⃣ Food Sources Matter Most Vitamins and minerals don’t float alone. Why are food companies adding food flavors? 1. New Publication Alert - Thrilled to share our latest publication: “Decoding Lager Beer Acceptability in Low-Flavor-Liking Consumers Using Targeted and Untargeted Flavoromics Approaches.” What makes this study different? • We connected beer chemistry directly to consumer liking—moving beyond trained sensory panels. • Consumers were segmented into two cohorts: Low-Flavor-Liking and High-Flavor-Liking, showing that not all beer drinkers prefer the same flavor chemistry. • For the Low-Flavor-Liking group, we identified 1 key aroma compound and 2 nonvolatile compounds that increased acceptance, while 5 aroma compounds and 3 bitter nonvolatile compounds decreased acceptance.
