Future Food-Tech San Francisco was a blast this year and we were thrilled to participate. Our CEO Kathleen C. Alexander joined fellow industry leaders on the main stage for a panel on cleaner labels, smart reformulation, and the novel ingredients reshaping food. One thing she shared: the ultra-processed conversation is asking the right questions with the wrong vocabulary. Processing itself isn't necessarily the problem. What matters isn't the number of steps; it's what those steps do to nutrition, and what they leave behind. We also hosted a networking breakfast featuring pastries from Jane the Bakery, made with our EcoButter™ — it was a great way to reconnect with old friends and make some new ones. And our VP of Commercialization Chiara Cecchini led a roundtable on the Scope 3 implications of the GHG Protocol's first-ever global standard for agricultural land use accounting. This is a conversation that sits squarely at the intersection of where Savor and many other food innovators operate, and where the industry's reporting obligations are heading. Last week, we were at United Airlines' hangar at LAX — not to fly, but to feed people. Savor was invited to be part of United Elevated, a global event showcasing the airline's vision for the future of travel, from new aircraft to upgraded cabin experiences across every class. We brought chocolates made in collaboration with TCHO Chocolate using our EcoButter™, and shared them with journalists, industry leaders, and aviation enthusiasts who came by our booth. Our presence there, as a United Airlines Ventures portfolio company, reflected a shared thesis: that the transition to renewable molecules must extend beyond transportation into every part of the economy. Food is one of the most important places to start, since fats and oils alone account for more than 7% of global greenhouse gas emissions. This follows our Climate Week NYC activation last fall, when we served artisanal bonbons made with Savor butter at a United Airlines Club at Newark International Airport. For years, the food industry has known that land use and agriculture represent some of the largest and least accounted for sources of emissions in corporate supply chains. In January, that changed with the release of the Greenhouse Gas Protocol (GHG Protocol)'s first-ever global standard for accounting for greenhouse gas emissions from agricultural land use. For any company sourcing agricultural commodities, the Scope 3 implications are significant.
