This Black History Month, we’re proud to celebrate General Manager and Chef Keleigh Green-Patton, who leads public school dining operations across Illinois, Wisconsin, and Indiana. Chef Keleigh’s journey began in the heart of her family’s kitchen—what she describes as a sanctuary where mothers, grandmothers, and aunts passed down heritage, wisdom, and love. As a child, she watched from the sidelines until she was finally trusted to prepare cherished family dishes like her grandmother’s Creole Gumbo. “Every pot tells a slightly different family story,” she shares—a reflection of ancestral resilience and tradition. Her passion for food and community eventually led her to testify before the U.S. House Agriculture Committee on the importance of SNAP—advocating for families who rely on nutritious, accessible meals. For nearly five years, Chef has served Elior School Dining, shaping the culinary for schools in Texas and Louisiana. Chef draws upon his heritage, family, and the cultural background that influences everything he creates—from bold flavors and traditional techniques to the way he designs nutritious, approachable meals for students. Even in large-scale school settings, he finds ways to introduce young people to diverse tastes while honoring the recipes and methods passed down through generations. His biggest inspiration? His mom. Today we spotlight Chef Joseph Chatman, Food Service Director at The SEED School of Maryland, where he’s known for his scratch-made, flavor-forward menus. One of the highlights of Chef Joe’s culinary career was earning First Place – Judges’ Choice at the Maryland Seafood Festival for his Maryland Crab Soup. Crafted with fresh regional ingredients including turnips, cabbage, green beans, mirepoix, and local fresh crab (of course!)– students enjoy his soup, and other Maryland favorites! His award-winning soup even led to an on‑air feature on WJZ‑TV News (CBS Baltimore).
