On Monday, we hosted our UK advisory board dinner. Franchisees, independent operators, global groups. Different businesses, different scales, one conversation. Operating conditions are the hardest they've been in years. Costs are up, margins are stretched, and the operators we work with across 1,500+ locations in the UK are asking the same question: when does government start treating hospitality as the economic engine it actually is? What’s shaping hospitality right now? At the National Restaurant Association Show in Chicago, one theme stood out above all else: AI. From Square unveiling its new ManagerBot tool and expanding API capabilities for custom dashboards, reporting, automation, and drive-thru ordering, the conversation has shifted beyond experimentation. Operators are now focused on practical ways to improve efficiency, visibility, and decision-making. Beyond technology, some of the most valuable moments came from connecting with operators and partners who are building modern hospitality brands, including Old Lisbon Restaurants, Ynot Italian, Plomo Quesadillas Bar. May 🌸 was a big month for hospitality. Here's what I took away: CAVA posted 9.7% same-store sales growth... driven by traffic, not price increases. That's the healthiest signal in the industry right now. Wingstop Restaurants Inc. saw domestic comps drop 8.7%. Shake Shack grew revenue 14% but watched margins compress. Chili's comped positive over a 31% prior-year number. (shoutout Brett Schulman, Rob Lynch, Michael Skipworth, and Kevin Hochman) The pattern? The brands winning right now aren't discounting. They're winning on consistency, operational discipline, and value perception. Meanwhile at the National Restaurant Association Show in Chicago, 58,000 professionals, 2,000+ vendors, the biggest conversation wasn't about food. It was about margin protection, labor forecasting, and financial visibility. Operators are finally investing in the back-office. And the NRA's own data said it plainly: 42% of US restaurants weren't profitable last year. That's not a bad quarter. That's a structural problem. UK restaurant sales dropped –11.3% week-on-week in Week 19. The Early May Bank Holiday did most of the work, with fewer locals in the city, extended corporate leave, and cooler temperatures keeping walk-ins low. The year-on-year picture is softer too, at –3.3%. But the trailing 13-week trend tells a more stable story. What a week. Paperchase co-sponsored the Five Guys Enterprises Games alongside our partners at Restaurant365. Thank you to Tim Wayman and Elizabeth Svienty for spending time with us at the booth. It meant a lot to have you there. The Games is a skills competition across three challenges: cheese stacking, burger wrapping, and fry slicing, all judged on quality and efficiency. Something our teams relate to. But what made this week was getting to watch our clients at Gellert Global Group absolutely run the table. Their employees train year-round for this moment. 4 of the 8 championship slots were GHG team members, and they took 1st, 2nd, and 3rd place, sweeping the competition and bringing home $180K in total prize money. GHG crew: you celebrated your team at our gala in India, and now we got to celebrate yours. That just feels right. Patrice Leys, there would be no Five Guys chapter at Paperchase without you. You were the first to believe in us and bring us into this community, and that's not something we forget. We're so lucky to work with Five Guys New York, and thrilled we got to celebrate your award-winning team this week. We also got to hear Raji Sankar of Wholesome International, recently named Businesswoman of the Year, speak on the franchisee owners panel.
